When I first started this low carb journey, the first thing I did was look up recipes. Tons of them. My Pinterest board is proof of that! ( http://www.pinterest.com/tkprice42206/low-carb/ ) And I was amazed at the amount of recipes that called for–of all things–cauliflower! I’ve never been a big user/consumer of cauliflower. In fact, I’m pretty sure that before I went low carb, I had never used cauliflower in a recipe. Ever. So, as I scanned through all of these recipes, I looked over at my husband and said “Next time you want to get me flowers, get me cauli-flowers!” (Yes, I literally said that. My husband says I tell the worst jokes.) He, of course, looked at me like I was a weirdo, as I’m sure you’re all looking at your computer screen right now. But, I was serious, to some degree. From pizza crust, to pasta, to potatoes, to rice–cauliflower seems to be the solution to ALL of my low carb problems!
